Vegan Lunch/Dinner Ideas

For me, anyway, lunch and dinner ideas can often be the same thing. Depending on how hungry I am, portion sizes may change but otherwise they tend to stick to something savory and vegetable/starch-based. These tend to be the meals that I sometimes have the hardest time coming up with something to make. Below are some ideas I have accumulated. If some of these suggestions seem too light, there is no shame in added some fruit or veggies to side for extra energy!


  • large salad (I mean a full-out salad that will keep you satisfied, energized, and happy)
  • tofu with brown rice and veggies
  • veggie wrap
  • soup with some whole grain bread
  • hummus/guacamole with whole grain pita and veggies
  • falafel wrap/pita
  • brown rice with black beans, corn, tomatoes, and nutritional yeast
  • quinoa with roasted tofu and peas
  • sauteed zucchini with brown rice and BBQ sauce
  • roasted butternut squash with brown rice
  • roasted potatoes with ketchup/red sauce
  • baked beans with rice and avocado
  • avocado toast
  • plant based sushi
  • roasted sweet potatoes with guacamole
  • sauteed mushrooms and zucchini with brown rice
  • roasted broccoli and potatoes
  • lentils and rice
